The best fish soup: Chupe.
I was amazed and very lucky to have tried the Chupe soup. I had the option of ordering it with shrimps or fish, so I went with the fish. Chupe is a hearty, thick and somewhat mildly spicy soup, it takes about ten minutes for them to prepare it. It is loaded with large kernels of South American corn, a whole fried egg floating in there, potatoes, chopped spice vegetable leaves and of course chunks of fish. You can always make it spicier to your taste by asking for adding some green or red pepper to the side. I have become addicted to the soup.
